Chiang Mai Thai Cookery School

While we were in Thailand, a group of us spent a day with Sompon Nabnian at his Chiang Mai Thai Cookery School, an adventure that began with buying our ingredients at a small market in town. BBC fans will remember Mr. Nabnian from the series he hosted on Thai cooking.

The day was rapid fire - a surreal and much more pastoral version of Iron Chef. Into the classroom to watch a demo - back to your station to cook it - and to the covered patio to eat your creation and compare notes. We prepared - and consumed - six dishes, each of us positioned at individual cooking stations. Amazing how a dozen people cooking the same thing in the same manner can result in dishes that vary widely in taste and heat and presentation.

Here's a little something I whipped up during class - phad hed ruam khao pod orn, fried mixed mushrooms with baby corn. And, yes, I did carefully cut those designs into the top of the mushrooms.

oh wow! Those peppers were so hot they gave me this sort of out-of-body feeling. At times, I wished there were a basket of naan in the middle of the table.
