Happiness Is Just A Cupcake Away

happy birthday, MCGCupcakes are happy little desserts, aren't they? Festive cups of sweetness that spread happiness wherever they go. A regular cake is so much more serious - even when whimsically decorated. But a cupcake ... first, you get to select the one that's just perfect for you. Then you get to peel it like a banana. I love peeling bananas. That's all about my favorite state of being ... anticipation. And then you get to open your mouth really wide and gobble the cupcake up a couple bites, trying to avoid getting crumbs and icing all over yourself. And that's usually not successful - so there you stand - in the middle of a group of other adults - and you've got blue or pink or yellow or green icing all over your lips. I took some cupcakes to work last week (thanks, Dori, for your expert preparation and decoration of a perfect dozen) to celebrate the 179th birthday of our university. The first person to eat one was my president. He walked into my office with one in his hand and a big silly grin on his face - a momentary respite from the serious business of our days.

World peace and happiness, I say. Through cupcakes.

Cupcakes bring out the kid in ALL of us! They make the best party food...way better than cake, because there's more icing per surface area.

Cupcakes! yes... a little cake that packs a big punch. Can use say, "white-on-white" cupcakes? Dangerous...

After peeling off the cupcake paper, I like to remove the bottom half of the cupcake and put it on top of the frosting so that I have a cupcake-frosting sandwich. My favorite cupcake is yellow cake with chocolate frosting. Maybe I need to go make some now....

I am with you, Luisa. Well, partway. After peeling off the cupcake paper, I like to remove the bottom half of the cupcake and immediately throw it away, reserving the top half with the frosting so that I have better frosting to cupcake ratio. Maybe I'll just go make a batch of frosting...

Viv, dahlink....remember my philosophy on canned goods? I don't buy pre-made or canned anything unless it is albacore tuna, chicken broth, Ortega chilies, or any kind of prepared tomato - stewed, diced, sliced or otherwise. Plus my favorite icing has cream cheese in it.

i just want you all to know that andrew made us the most fabulous white-on-white homemade 2 layer cake decorated with light blue sugar sprinkles (not too many, just right) and i don't know how he made the icing but he is now my icing pimp. andrew, you rock!!!
